
Fried eggs are a breakfast staple, a great source of protein that gives you everything you need to go and seize the day. But there's something you can add during cooking that will make them taste infinitely better - and it may surprise you.

Cookbook author and New York Times columist Melissa Clark says, in her book Dinner: Changing the Game, that adding fresh herbs to the pan is a 'genius' food hack.
To start, once the oil is piping hot, sprinkle some fresh herbs into the pot before cracking your eggs right on top.
Not only do the herbs infuse the oil with flavour, but they get irresistibly crispy, adding that perfect texture to your fried eggs.

Clark notes fresh sage as an ideal choice, while other cooks opt for the likes of parsley which adds a super fresh flavour to the eggs.
Other often used options include sage, cilantro, basil, tarragon, rosemary and oregano - just remember to discard the herbs before serving as they're less than appetising to eat.
